I am a huge mushroom fan so in this dish, I decided to let them shine on through! I had never tried the red/black quinoa, but the colours were beautiful so i did a half and half mix of the yellow and red. I love colours in food and sometimes match flavours by matching up the natural colours. I wanted a rich, savoury side for some lightly flavoured chicken and brussel sprouts so I put together this colourful, savoury side. This one was a BIG hit and made for a great savoury quinoa side dish!

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 2-4


  • 7-8 mushrooms
  • 2 cloves garlic
  • 1 cup quinoa (cooked)
  • 1 onion

Cooking Directions

  1. This one is really easy. Just cook the quinoa using the basic quinoa recipe.
  2. While that is simmering, saute up the mushrooms in butter. Season with salt and pepper. Add to the quinoa and let the flavours mesh together for a few minutes before serving. Serve hot. Enjoy!
