Sauteed Mushroom & Quinoa Side Dish
I am a huge mushroom fan so in this dish, I decided to let them shine on through! I had never tried the red/black quinoa, but the colours were beautiful so i did a half and half mix of the yellow and red. I love colours in food and sometimes match flavours by matching up the natural colours. I wanted a rich, savoury side for some lightly flavoured chicken and brussel sprouts so I put together this colourful, savoury side. This one was a BIG hit and made for a great savoury quinoa side dish!

- 7-8 mushrooms
- 2 cloves garlic
- 1 cup quinoa (cooked)
- 1 onion
- This one is really easy. Just cook the quinoa using the basic quinoa recipe.
- While that is simmering, saute up the mushrooms in butter. Season with salt and pepper. Add to the quinoa and let the flavours mesh together for a few minutes before serving. Serve hot. Enjoy!
