Rustic Veggie & Quinoa Mash
Who doesn\\\'t love a good, hearty mash? I grew up in a meat and mash loving home and my dad has always loved doing up a good, rustic veggie mash of mixed root veggies. He\\\'d throw in whatever root veggies he could get his hands on, potatoes, carrots, sweet potato, rutabaga, loads of garlic and onion and the skins were almost always left on the potats which only added to the rustic texture. My partner has taken on the role of veggie mash master, but has kindly let me throw in my little twist - quinoa. This recipe takes that classic veggie mash and adds an extra healthy kick. When the mash is just about ready, add in some cooked quinoa. It works really well with the flavours and only further enhances the rustic textures.
Prep Time: 5 months, 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Yield: 2-4
Ingredients
- 2 sweet potato
- 2 red skin potato
- 2 carrots
- 2 cloves garlic
- 1 onion
- 1 green onion
- 1 pinch salt & pepper
Cooking Directions
- Toss all the veggies in a pot of salted water and bring to a boil. When the veggies are tender (but not too soft as we want a nice chunky mash), pour out the water. Add the milk, butter, garlic and basic quinoa. Mash all together until it’s a nice, thick consistency (see photo). Enjoy!
