Curried Quinoa and Vegetable Stir Fry

This was my first quinoa experiment. In this first attempt, I decided to treat the quinoa like rice. I love curry and often put curry in rice, so I figured, \"Why not in quinoa?\". I had heard if you rinse the quinoa first and let it soak for a bit, the nutty flavour will be toned down a bit. Not too confident about the nuttiness combination with curry, I went with the rinsing approach. As you\'ll see in the recipe below, I threw the curry right in the water that I was cooking the quinoa in. My uncle Frank taught me this trick and refers to it as \"impregnating the rice\" or in this case the quinoa with flavour. I am really happy with how this recipe turned out. The curry added a real punch to the quinoa and worked really well with all the other flavours. If you are someone who like stir fry, you will no doubt enjoy this meal.

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 2-4 servings


  • 1 zuccini
  • 1 carrot
  • 1 onion
  • 5-6 mushrooms
  • 1 skinless chicken breast
  • 1 cup dry quinoa
  • 2 tbsp yellow curry
  • 2 cups water

Cooking Directions

  1. It’s probably best to start with the quinoa since the timing can vary a bit. Add the dried quinoa and curry powder to a pot of cold water. Bring to a boil then let simmer for about 15 minutes or until the quinoa is light and fluffy. Leave the lid on and do not stir until it is almost complete. Let sit a few minutes.
  2. In the meantime, heat the olive oil in a pan and add the garlic and onion. Sauté those until the onion is almost translucent. Add the chicken breast and fry until the chicken is white all the way through. Add the chopped veggies. Sauté until veggies are tender. Season with salt and pepper.
  3. Combine the quinoa with the veggies and chicken or serve on a bed of the curried quinoa. Enjoy!
